Playing Catch Up! -- Dec 6, 2015

Sorry I've been away from the blog for awhile!  I can't believe we are into December already!

We had a very nice Thanksgiving feast here at the BLM campground.  Tons of food!  And there needed to be tons.  Upwards of about 100 fellow RVers attended!  I didn't get many photos only because I wanted to be in the food lines.  LOL!  Plus it was a little brisk, and I don't care for cold food.  Here are a few from last year to give you and idea.

We were fortunate that the full moon was aligned with the holiday!

Not a lot out of the ordinary has been going on around here the past week.  More folks coming in for the winter.  I see just about everyone I knew from last year, so lots of familiar faces.  Still playing desert golf just about every day....except for the chilly, windy days.  I'm just not a fan of wind!  A breeze is fine, but it gets WINDY out here.  Hard to concentrate on making a hole in one!

I've been back down to Los Algodones, Mexico.  I escorted the new RVers there one day so they could see what it was all about.  We haggled with a few jewelry dealers and had lunch in a little restaurant in the "mall".  Mall of dentists, that is.  If  you recall, there are 400-500 dentists within about 3 blocks.  Crazy!  Anyway, we had a nice lunch and were entertained by musicians....a local, Mexican duo.  He handled the electronic keyboard with all its various sound effects and she did most of the singing. They totally cater to us "snowboards" with songs like "Roll Out The Barrel" polka and Patsy Cline songs.  It's pretty interesting to hear these songs delivered with a strong Mexican accent! I didn't take my camera along on this little trip.  I'll be back down there again before March, I'm sure.

The weather will be around 80 this coming week!  Can't beat that for December!  But then it drops to the 60's, which still isn't bad.  That little wind symbol on Friday doesn't look fun.  That usually means 20+ mph winds....which will be bringing in the "cold" weather.....batten down the hatches!

The "Sky Guy" is still buzzing around....that really looks like fun to me!

I missed this week's hike because I forgot what day it was!  One day melds into the next out here.  I often have to look at my phone to know what day it is.

The main reason I've been tardy in posting is due to my #1 least favorite company in the universe. Hint: Starts with a "V" and ends with "erizon".  They pulled the unlimited program out from underneath everyone who had gotten in on it....including an entire school system.  I could say a lot of unattractive words about it all, but since it's the holidays, I'll keep them to myself!  LOL!  Anyway, I'm hooked into a friend's system here at the campground.  It works, but it is slower than I've been used to, and I want to be thoughtful about how much I'm using it so Netflix and any other streaming I was enjoying have come to a screeching halt.  I also couldn't get the signal booster to work through my laptop, so I've had to resort to using my old Windows 7 laptop until I can get the other one working.  That means, transferring all my photos from the good one to the old one....at least for this post. And the old laptop has issues...like sticking keys, overheating and a battery that seems to last only about 10 minutes.  But, I'm grateful to have, at least until I leave here, some resource for internet that doesn't involve the above mentioned provider!  With all that said, right now I have a really fast connection!  My day is complete!  LOL!

When I go into Yuma, I drive through the Army's Yuma Proving Grounds.  Consequently, I often see lots of military apparatus.  One day I'll stop at the Visitor's Center and get some photos of all the tanks, etc. they have on display.  Here are a few snaps I took on my way into town the other day....

Apache Helicopter on display....

As is the norm out here, we've seen more pretty sunsets and sunrises!

There aren't a lot of birds around here, but every once in a while a flock of red-winged black birds will swoop through. Hard to imagine them in the desert....I've always seen them out in farm land areas.  We're probably not supposed to, but I toss out bread crumbs for them sometimes.

Oh -- I promised to give you all the recipe for the side dish I made for the Thanksgiving potluck.  It's so easy and it was gone before I could even get a taste of it...so I made 1/2 recipe for myself yesterday!  A lot of people tracked me down to find out what it was and to tell me how much they enjoyed it.  Prep time is about 10 minutes - baking time is 25-30 minutes.

Southern Scalloped Pineapple

1 cup sugar
6 tablespoons flour
2 cups grated sharp cheddar cheese
2 (20 oz) cans pineapple chunks, drained
(reserve 6 tablespoons of the pineapple juice)
1 cup Ritz cracker crumbs (1 sleeve)
8 tablespoons (1 stick) melted butter
1 cup sweetened shredded coconut (divided x 2) OPTIONAL
-------------------------------------------------------------
Preheat oven to 350*F
Grease a medium size casserole dish with cooking spray (or butter)
In a mixing bowl, stir together the sugar and flour.  Gradually stir in the cheese
and 1/2 cup coconut, if using.
Add the drained pineapple chunks and stir all ingredients until well combined.*
Pour into prepared casserole dish.

In same bowl, combine cracker crumbs, melted butter, reserved pineapple juice and
the remaining 1/2 cup coconut, if using.
Stir until evenly blended.
Spread crumb mixture evenly over pineapple mixture.
Bake for 25-30 minutes, or until golden brown.

*(Sometimes I caramelize the pineapple in some butter and a little brown sugar ahead of time.  Really like it better that way.)

Enjoy!  A little goes a long way!

I've also been working on adding "zen-gems" into my zen art.  They are drawn with colored pencils and take a little practice, but they are fun to play around with...

That wraps up this mish-mash of happenings around the BLM lately.  Some people are putting their Christmas lights up....more on that later!

Thank you, everyone, for ordering through my Amazon links!  I earn a [very] small commission on orders placed via my links, but it all adds up and helps me maintain the blog.

Have a great week!

A March Through Nature -- Nov 20, 2015

Last post I promised a review of our first hike of the season.  Well....here it is!

At 9:00am, we started out at the hub of the campsite and headed across the main road....then...the climb started....

The sun was still fairly low, so it brightened up the landscape a bit, reflecting on the
few plants that inhabit this rocky, desert landscape...

It was a crisp, breezy morning, but warmed up quickly...

Before reaching great heights, a pretty view of the Senator Wash Reservoir came into view...

As you can see, it's a vast, rocky terrain...almost volcanic looking....
so desolate and foreboding...and mysterious,,,

This gives you a bit of an idea of the largest part of this BLM camping area...
it's not too populated yet...
The water you see is the water treatment center.
Above it in the picture is "our" golf course!

The reservoir is getting further away!

We stopped here for a breather and a look at the view...

...the view of Castle Dome far in the distance.
It's actually about 30 miles away.

Something was kicking up sand for the longest time in this spot...
never did figure out what it was...

Onward and upward!
These trails are rough and natural...nothing "commercialized" about them!

One more nice view of Castle Dome.
Eventho' this is the desert, it is full of undulating hills and valleys...

This was about the peak of the hike....
a narrow pass through...

One last view of the mountains from our highly elevated vantage point...
So peaceful and beautiful!

So, that was the hike!  I didn't go on yesterday's hike.  I had to go into Yuma for a lot of errands and didn't want to hit the Friday or weekend rush...the weekend before Thanksgiving.  I got in and out as quickly as I could, but it still seemed like it took forever!

We've had more pretty sunsets...they never get old!

Still experimenting with the GoSun Solar Oven.  Often, "experiments" of any kind have an if-y success rate.
Well...not in the GoSun!  Seems everything comes out perfectly!

Cranberry/Blueberry Upside Down Cake
Sweet and gooey!  Can't go wrong with that!

Country-Style Ribs
These were soooooo moist and juicy!

Now....guess what??  If you are interested in purchasing a GoSun Solar Oven, I can now offer you a discount code to save $25 by ordering from their website!

Just use Promotional Code
AMBAP53 at checkout and receive $25 off any oven!
(I have the Go Sun Sport model)

Remember....this is not just for RVers or those who camp a lot....NOT AT ALL! Anyone can use this solar oven anywhere! Beach, back yard, picnic areas....while you are out fishing or hiking or tailgating or sledding.....anywhere you are going to want a hot meal in just a few minutes! It's so compact and lightweight (less than 4 lbs)! A Go Sun Solar Oven would make a fantastic gift, too....forget individual gifts....this can be a family gift. Kids will love to learn what the sun can do for us in our daily lives! They will gobble up a sweet upside down cake or buffalo wings! That makes learning even better!

Our temps are still in the 70s-low 80s. No complaints here! BUT....on Thanksgiving, we'll start to see some "winter" temps, in the 60s. Everyone here is looking forward to the huge Thanksgiving potluck! The turkeys, mashed potatoes, dressing and coffee are provided by the BLM. We all bring the sides and desserts and our own beverage. There will probably be about 60 or so in attendance! I'm bringing an old southern favorite that I doubt anyone will replicate. I will share the recipe with you next time...it's not just for Thanksgiving! You can make this anytime.

That's about it from here on this very sunny, 82* day in the desert. Everyone enjoy your weekend! And, of course, thank you to everyone who has been ordering via my Amazon link! I will provide links for gift savings for the next month. Forget the crowds and hassle...just order from Amazon and have everything shipped to your door! Couldn't be easier!

Ramblings and Rock Stars - Dec 7, 2014

Hello out there!  Can you believe it's December??  Every day that passes I realize it's one more day I haven't created a new post.  With that said, there are two reason I've been MIA.  For the past week or so, my internet was a little touch and go, but I think it's fine now.  And I've also been quite under the weather for the past week...enough that I went to Urgent Care in Yuma.  As I'm writing this, I'm probably about 70%.  But I'm going to take a stab at it anyway!  The show must go on!

What a lot of people tend to not realize is the RV lifestyle is a LIFESTYLE...just like living in a big city, a small town, on a farm, in an apartment/condo, a subdivision, etc.  It's really NOT an un-ending vacation or camping trip.  Sure, for the first part of this adventure, it seemed as if it was because I was hopping across the country, relatively quickly, showing you (and myself) a lot of sights. However, when you settle down in one spot for any length of time, IT'S WHERE YOU LIVE....and stuff happens just like living anywhere. You make friends in your "neighborhood", people get sick, your neighbors help you out (and they really do here!), people decorate their "yards", pets go over the Rainbow Bridge, you burn your hand on the stove. You cook, clean, do errands, take care of house maintenance items, rearrange closets and all that other good stuff.  It's not all fun and games!  Nothing tells you all this quicker than not feeling well.  But, once you embrace it, which takes a little while if you're just starting out full time, it is a very unique, enjoyable lifestyle!  You can live anywhere, anytime!
                    ______________________________________________________________

I trust everyone had a wonderful Thanksgiving!  We had a pot luck here at the BLM.  About 80 fellow RVers were in attendance.  There was a lot of  mighty good food!  I made Orange Streusel Sweet Potatoes.  I should have taken a photo, but I took them out of the oven at the very last second so they would stay hot.  But, I did get a photo of the "after"!  They were gone in a jiffy!  I think the streusel topping was something different for everyone.  (I had two helpings, myself!  LOL!)   I cooked my potatoes with a little orange juice in the pressure cooker, drained and added some brown sugar and a little cream cheese and a pinch of salt (a little bit of salt always enhances the flavors in something sweet like this.)  Mashed them up by hand and added the streusel topping. Find any streusel topping recipe (I substituted the water with OJ and added a drop or two of orange extract) and cover the entire top of your sweet potatoes.  Bake until the streusel gets slightly browned and crunchy.  Try them for Christmas -- or anytime!  Really yummy!

The gathering was at the "Gravel Pit Ramada". It is huge and below grade.  I could have walked over there if I hadn't been carrying a piping hot casserole, a chair, and my camera.  My friends, Karen and Brad, were kind enough to pick me up.  The ramada is also host to aerobics and yoga classes during the week and a music jam on Sunday afternoons.  Must get to that!  It was on the "something fun list" for today, but I don't think I'm feeling well enough.  Hopefully, next Sunday!

The "Rock Star" of the holiday was Mena... Karen and Brad's sweet little pooch....  she LOVES rocks! She totes pretty good size rocks around like stuffed animals.  So funny!  She had quite an audience.  She stares them down.......then.......moves in for the capture!  She rarely kills one, tho'!  LOL!

Okay....so what else has been happening out here at this great BLM site???

Every single day isn't "perfect" here as far as the weather.  We've had a couple of very high wind days with blowing sand and dust.  Nothing to do but stay indoors.  Although, one morning it didn't start out windy but by the time my golfing buddies and I were about half way through the course.....WOW!  It was hard to stand up.  Had dust grit in our mouths and eyes and our golf balls were carried every which way.  But, do you think that stopped us?? NO!  LOL!  But we all commented the next day on how exhausted we were from fighting the wind when we finished up that round!

Here are a few shots of the worst day....starting first with a "normal" day overlooking the reservoir....yes, it really looks like this!

How quickly it all can change!

Really glad those days don't pop up often.....  plus, anything you have stored outside your RV is, as you can well imagine, covered in dirt and sand.  UGH!

That was outside.  Let's move indoors!  I don't think I've ever gotten around to posting photos of the INSIDE of my house.  What better time than now?  It's fairly self-explanatory!  C'mon in!

(Yes, it looks a slight bit 'tilted'...it is.  When I took these I was parked along a curbside where the street wasn't flat to aid water run off.)

I feel like I took this from a relatively no-character "camper" to a home by adding drapes (I, personally, much prefer them over shades or blinds), decorator pillows, oriental rugs, "chandelier", the convenient peg boards, etc.

Being almost 25 years old, nothing at all fancy here, but it is quite efficient.  Once you pare down to the essentials (which are WAY less than you would first think!),  there's really plenty of space for just about everything. I have extras that a lot of people may not have -- painting canvases, art supplies/paints, a boxes of some of my framed photos and the ceramic Aura Tiles I make,..stuff like that and still enough space.

There are three things I would change if  I could.  1) the bed in the corner - IMPOSSIBLE to make up!  Looks ok here, but it took over 30 minutes to get it that way!  2) a little more kitchen counter space somehow; and 3) get rid of all the carpeting and replace with Allure wood plank flooring.  Lots of RVers have done this. It's relatively easy and inexpensive to install yourself.  It's on my bucket list! But, overall, this house is very workable.  Even with no slides (which I think are just another thing that can have problems..... but if I won the lottery, I'd probably upgrade with them!  LOL! but you don't miss what you have never experienced!), I never feel claustrophobic with so many large windows. Ultimately, it sleeps six, but I can't imagine I will never have five people staying with me!

Finally  ----

A BIG THANK YOU to everyone who has been ordering through my Amazon link! Lots of holiday shopping going on!  Still plenty of time if you have Amazon Prime... or subscribe now to start this great shipping benefit.  It's well worth it if you order fairly regularly from Amazon.  Free AND very fast shipping!  Oh....and don't forget about gift cards. No worries about what anyone needs or wants....they can choose for themselves from millions of products.  What better gift??

I will leave you with some early morning light shows.....no better way to wake up than seeing nature's effortless artwork!

Love these striated, sunrise clouds!

A foggy, desert morning....

I will check in before the holidays....it's beginning to look a lot like Christmas around here!

Have a good week, everyone!

A Trip Through the Culinary Cranberry Bog - Nov 5, 2014

Before I start our trip through the Culinary Cranberry Bog, I want to thank all of you who have been ordering all kinds of products from Amazon.com via my blog link!  Many, many thanks!
_______________________________________________________________________________

Can you believe it??  The holidays are bearing down on us!  Being here in the desert, I don't think about it approaching as quickly as it is because the weather stays the same....warm/sun, warm/sun, warm/sun, warm/sun.  For at least the next 10 days it will be between 84-90* and not a cloud in the sky.  But, the days are ticking down to Thanksgiving nonetheless!

I don't know about you, but when I think about Thanksgiving and the December holidays, I think "cranberries"!

As some of you may know,  not too long ago, in my former life, I was a personal chef. Singles, couples, families, seniors...I had a very broad spectrum of clients with all kinds of likes and dislikes.  I was always coming up with recipes that would offer something seasonal.  I thought you might enjoy some recipes here in my blog from time to time. And yes, I can...and do....prepare these recipes in the RV!  It's no different than cooking in a 'house' -- well...except there's a bit (a lot!) less counter space.  But, that hasn't stopped me!

So, today, I have a few cranberry recipes to share with you.  I like cranberries so much, I buy lots of bags of cranberries now, when they are in season, and keep them in the freezer all year long...these dishes are good year 'round!  I love the color of cranberries.  Have I ever mentioned that one of my favorite colors is red??  The drapes in the RV are cranberry red!

Let's start with a cranberry basic.  There's nothing better than homemade cranberry sauce!  Please don't serve canned sauce with your holiday meal....homemade is worlds apart from canned and sooooo easy to prepare!  Only three simple ingredients.  There are uses for canned cranberry sauce coming up, but this is what you will want to accompany your main meal! And it's really great on those leftover turkey sandwiches! OR spoon over a block of semi-softened cream cheese, sprinkled with some zested orange rind and serve with crackers!  So simple and delicious!  OR spoon it over cake and ice cream!

Homemade Cranberry Sauce
+ sugar and water!  That's it!

1 (12 oz) bag fresh cranberries
1 cup sugar
2 cups water

Combine sugar and water in a medium sauce pan or deep skillet.  Bring to a boil.
Stir in the cranberries and mix well.  Bring to a boil then reduce heat and boil gently for 8-10 minutes until most all the berries *pop*.

Cool and pour into your serving dish.  Refrigerate until thickened.
This can be made several days in advance!

THE BEST cranberry sauce!

Let's get our cranberry-inspired meal started by heading to the bar!
What better way to get the holiday feeling started than with a cocktail!
This cocktail is refreshing any time of year!

Cranberry Cocktail

2 oz. Vodka
4 oz. Cranberry Juice
2 oz. Ginger Ale
Fresh Mint (if available)
Ice Cubes

Stir juices together, pour over ice and garnish with fresh mint, a few fresh cranberries and lime slice

And with cocktails or wine, there's always something to nibble on while your guests are mingling!
Serve these meatballs with pita toasts and a veggie platter.
Your guests will want this recipe!

Cranberry Meatballs

(To save time, I use frozen Italian meatballs, or you can always make your own from scratch.)

2 lbs. frozen meatballs
1 (16 oz) can jellied cranberry sauce
1 (8 oz) bottle barbeque sauce
2 Tbls brown sugar
1 Tbl lemon juice
Dash salt

In a mixing bowl, combine cranberry sauce, BBQ sauce, brown sugar, salt and lemon juice until thoroughly combined.  Place meatballs in slow cooker/crockpot and cover with sauce.  Cook on low 3-4 hours.  These can be made ahead and reheated!

With everyone around the table now, a well known appetizer...with a twist... is up next!

Shrimp with a Zesty Cranberry Cocktail Sauce

1 can jellied cranberry sauce (or preferably, home made!)
1/2 cup chili sauce
1 Tbls finely chopped onion
2 Tbls Worchestershire sauce
2 Tbls red wine vinegar
1 tsp prepared horseradish
Grated zest of one lemon

Combine all ingredients in a medium sauce pan.  Bring to boil on med-high heat, then reduce heat to low and simmer for about 10 minutes, stirring frequently, until the sauce thickens a bit.
Cool and refrigerate until cold and ready to serve.  Another "make ahead"!
__________________________________________________________________________

 On to the main course!
This can be prepared with chicken or turkey.  I use thighs for more flavor, but you can use breasts -- with a little less cooking time.  Serve with oven roasted broccoli or brussels sprouts and roasted red potatoes garnished with rosemary for a pretty plate!

Cranberry Chicken

1 1/4 cups  all purpose flour
1 tsp salt
1/2 tsp pepper
1 tsp each of any dried herbs/seasoning you have -- oregano, basil, garlic powder (I use them all!)
8-10 boneless, skinless chicken thighs
2 cups fresh/frozen cranberries
1/4 cup butter + 2 Tbls set aside
1/4 cup olive oil
1 1/2 cups water
1 cup packed brown sugar
1 Tbls red wine vinegar (I used tarragon vinegar I had on hand)
Dash ground nutmeg (I also added a dash of pumpkin pie spice)

In a large zip lock bag, combine the flour, salt, pepper, and seasonings.  Dredge the chicken.  In a large skillet, brown chicken, in batches, in 1/4 c. butter and olive oil until browned on both sides,  Remove chicken and set aside.
In the same skillet, combine the cranberries, water, brown sugar, vinegar and nutmeg.
Cover and simmer for about 5 minutes.  Add reserved 2 Tbls butter.  Simmer, uncovered, until reduced a bit and thickened...about 20 minutes.
Place chicken on top, cover, and simmer for about 40 minutes or until chicken is cooked through.  Remove chicken to platter (or plates) and spoon over cranberry mixture.

 An finally, a little dessert!
Top this cake with whipped cream, ice cream, home made cranberry sauce or bourbon sauce!  YUM!

Cranberry Pecan Sour Cream Loaf Cake
This is good for breakfast or with afternoon tea, too!

2 cups all purpose flour
1 Tbls baking powder
1/2 tsp baking soda
1/4 tsp salt
1/2 cup sugar
1/4 cup butter, softened
1 egg, beaten
1 cup sour cream
1/4 cup orange juice
1 tsp freshly grated orange zest
1 tsp vanilla extract
1 cup chopped fresh cranberries
1/2 cup chopped pecans, toasted

Heat oven to 375*.  In a small mixing bowl combine the flour, baking powder, baking soda and salt; set aside.  In a large mixing bowl add 1/2 cup sugar and butter.  Beat until creamy...about 1 minute. Add the egg, sour cream, orange juice, orange zest, and vanilla extract.  Continue beating, scraping bowl often, until creamy...about 1 minute. Add the flour mixture to the sour cream mixture and mix just until moistened.  Gently stir in the cranberries and pecans.  Spoon evenly into 3 greased 3x5 pans.  Sprinkle tops evenly with the remaining 1 Tbls sugar.  Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.  Cool for 10 minutes on wire rack.  Turn cake out of pans.  Cut into slices and serve with your favorite topping, if desired.

I hope you will try these easy recipes.  I'm pretty confident you will love them and love sharing them with your family and friends!

Bon appetit from the desert!
